Egg drop sesame noodle soup

Its the last moth of summer, sunshine all around, warm breezes in the afternoon and picnics on the top of long field hills….

Well. That is not the case in my house. The only happy, summer filled ones are the dogs! Its rather difficult to enjoy the last month of summer, let alone get out of bed to shuffle to the coffee and try and process thoughts, when you have a cold. Colds are for the winter, when you can snuggle in warm blankets by the fire and read a cute book or a nice movie. Not summer.

Oscar, my twenty year old cousin came to our Bach two weeks ago with Dad and I, caught a cold and slowly the damn cold spread its way though the family.

What do you eat when you feel like a fluid sponge with a raspy throat? Soup of course, what else?

This soup is super easy and satisfying. Perfect for a 10 minute knock together when all you want to do is relax.

Oh and sorry about the lack of posts recently, I have sworn an oath to try and post a new recipe every Two weeks…or less.

Egg drop sesame noodle soup

Serves 3

  • A liter of chicken stock organic, preferably homemade (or vegetable stock)
  • a good handful of green tea soba noodles
  • 3 kaffir lime leaves
  • sea salt
  • A lemon
  • An avocado, scooped out of the case and sliced lenghtways
  • One red chili, finely sliced
  • Two spring onions, finely sliced, diagonally
  • sesame oil
  • soy sauce

Boil the kettle filled with water. Plop a medium pot onto heat on the the stove and pour in the chicken stock and add the the lime leaves.

Pour the boiling water into another sauce pan on high heat, bring back to the boil and add the noodles, cook for time told on packet.

Very lightly whisk the egg with a teaspoon of sesame oil in a bowl with a pinch of salt.

Drain and rinse the cooked noodles under cold water and add to the chicken stock pot. Splash in a tablespoon of soy sauce and stir around. Now pour in the egg mix and incorporate with soup, you will notice that the egg will cook instantly!

Now ladle the steaming soup and noodles into a good bowl and garnish the top with the spring onion slices, chilli, avocado and a generous amount of sesame oil and a little squeeze of lemon. Stick some chopsticks in and go snuggle down with a good book on the couch, cradling you lovely bowl of noodles like your dearest possession.
