A Zesty Breakfast- Orange and coconut cream with porridge + super foods.

Super food! Its the food with magic powers! The power to lift cars, teleport, and hey, even fly! No, no wait that’s super heroes… But not that far off. As far as having a super hero for your body system, super foods are one of the closest your going to get to it.

If you search super foods on google and click on the first link, These are the list of foods your going to get:

  • Beans
  • Blueberries
  • Broccoli
  • Oats
  • Oranges
  • Pumpkin
  • Salmon
  • Soy
  • Spinach
  • Tea (green or black)
  • Tomatoes
  • Turkey
  • Walnuts
  • Yogurt

Yum.  Looking pretty good for me considering I had yogurt, blueberries, walnuts, oats, and orange in my breakfast this morning… Oh and salmon for lunch.

But If you continued looking at google after that I think that nearly everyone would get confused. You could create an endless list with the foods that people all over the internet have classified as “super”. So really, what are Super Foods???

My opinion on this stuff is that all of it is super!!! Think of all the wonderful minerals and vitamins you can get from pretty much every non-procces, natural food out there in the world. Every one of them has magic in them that can make you sprout wings and fly away. Well, maybe not quite that, but I think you get my point. All of the natural foods are good.

Then Where did this whole idea of giving a certain group of food all the glory and fancy titles come from?  Why are certain foods said to be super?

Well Some foods do actually stand out in the crowd when it comes to quantity of goodness in small amounts of food. These are normally what people say are super foods. And they really are a fantastic way to get all that goodness into you without having to eat a garden. Om nom nom. Garden.

So if you are wanting to know what exactly these foods are then you don’t have to look far. Just like you would have seen browsing though google, the info is all over the place. And none of the things that people list are really wrong! All these beautiful foods have wonderfully good stuff for you packed into them. And none of them would hurt you to eat them. What you really need to do is to find your super foods. Look though the lists and try things out! See what works best for you body and how easy it is to incorporate these food into you daily life. No one in the world will be completely happy with someone else’s opinion, because it’s designed for them not you.

For me, these are the foods I think are super…

  • Blueberries
  • Chia seeds
  • Nettle
  • Nuts & seeds
  • Buckwheat
  • Barley
  • eggs
  • salmon
  • Beans
  • Bananas
  • Seriously if I listed them all it would be too long.

I seem to favour the letter B….. 😉

Enough rambling from me! This zesty breakfast is a bowl full of super foods!  And its really perfect for a foggy day like the one I’m having at the moment, you can also have this as a chilled porridge by soaking the porridge ingredients in the fridge over night!

Serves 2

Ingredients for Coconut ‘yogurt’:

  • 1/2 a 400ml tin of coconut milk, organic!
  • zest of 1 orange
  • a handful of soaked almonds
  • 3-4 dates
  • 1/4 teaspoon of vanilla paste or seeds

Ingredients for Porridge:

  • 1 cup of you grain of choice. Ones that work well are quinoa flakes or millet, or oats!
  • 1/2 teaspoon of ground cloves
  • a small handful of raisins
  • 1 1/2 cups of water
  • 1/4 cup of orange juice, about one orange

Ingredients for topping:

  • 2 oranges
  • toasted coconut flakes
  • honey, or date syrup
  • bee pollen
  • toasted nuts & seeds

Coconut yogurt: Pour half the tin of coconut milk into a blender or a food processor along with the rest of the ingredients. Blend until it has thickened and mixed well.

Porridge: Boil the water and orange juice in a small pan and then add your other ingredients. Cook and stir until all the liquid has been absorbed. The alternative method is to slack all of the ingredients over night in the fridge and serve the next morning.

Assemble: Pour the porridge into two bowls and top with some coconut yogurt. Then peel and chop your oranges into pieces and lay on top. Finish with the remaining toppings and any other you would like!
